What do you think about the install? I got mine in today and it looks a bit wonky to me.
I'll take a pic later for comparison with the regular Shindo nakiri that I got last year
Takada is very responsive and speaks great English. He may have some stock but it's always a toss up.
Jikko is cool to go to to see the shop front, very posh, very fancy
You can also consider Baba Hamono, Konosuke, Hado, Ashi. I made the unfortunate mistake of going to Sakai on a Saturday and...
This has certainly been a matter of discussion and debate in the past. Especially when it surrounds Chelsea Miller . I remember a particularly heated discussion last year(?) in the ugly knife thread(?). I think one of the members that was part of that debate has since deleted their account...
I mean can't you say the same about knives? Certainly there are subtle differences in steel, grind, heat treatment, fit and finish for more expensive knives but how much of a difference is there between a $200 knife vs $500, let alone $1k+?

Thanks yall. I remember a couple of years ago even talking about Dao Vua brought up intense reaction because of the poor steel and heat treatment (let along the questionable accusations of lead in the steel). Glad to hear they've seemed to turn it around. Will definitely keep it in mind as an option
(posting this here since I don't want to make a separate thread for it)
Whats the general consensus these days about Doa Vua, especially the newer generation that is being sold at tokushu? Im thinking of buying some cheap(er) knives as gifts for some buddies and was eyeing these, especially...
Placed an order for the tall Shindo on 5/1/24 and didn't get another notification until yesterday that it was shipped out. Your experience with how busy they are certainly explains that delay now. Glad I didn't bug them incessantly about my order like I was so tempted to do.
Kewpie is the only mayo besides Dukes that I can tolerate. Hellman's in my mind is inferior but at least it's not miracle whip. As far as worth the investment, can't answer that but I assume it'll be difficult to find in Montana. And in the end it's just mayo. I'm fortunate to live in a place...
