Will be traveling to Tokyo in June 2024. Would like recommendations for local non-touristy knife stores that are passionate about their craft. Would like to get a nice Yanagiba and sujihiki and maybe a few others. Mostly like to support the small passionate local stores off the typical tourist destinations.

Thanks for the suggestion. I just found out about Carbon Knife yesterday while researching for my Tokyo trip. Definitely will plan on visiting them the next time I am in Denver.
Kind of feel like my first Japanese knife should be purchased in person in Japan. Anyhow, right now I have Hitohira, Teruyasu Fujiwara, and Morihei on my list to visit while in Tokyo. I think between the three, I should be able to find a knife or two, may be three?
