Looking forward to your 'collection', Jon!
i need to take more before and after pics because even the worst of these pale in comparison to what i see here sometimes
I didn't get an answer when I askedWhat happened to number 2? You'd think they'd stop after the first chip....but noooo. They wanted a Suji
Thanks for your hard worki need to take more before and after pics because even the worst of these pale in comparison to what i see here sometimes
Looks like a custom knife with hook grind in the front

It is funny when customers come in and ask if you can sharpen their knife. Sometimes it's quite a bit of work to get the knife to sharpening stage.
I wish I had pictures of the knives I've been turning away for sharpening.
Some would call that patina with a partially serrated edge at the tip
There's a video from Murray Carter mentioning something similar.
Make it stop! But seriously good for you for bringing them back to life!View attachment 262552View attachment 262553View attachment 262554View attachment 262555View attachment 262556View attachment 262557
Here are a few good ones from a quick flip through my camera roll
Yeah, that second one (Manaka?) is hilarious. What I'm picturing is some poor dude's wife got angry and took it out on one of his knives. That one looks intentional.View attachment 262552View attachment 262553View attachment 262554View attachment 262555View attachment 262556View attachment 262557

I hammered it till it was straight then did a major thin on it. It's pretty much a zero grind now but I put a little koba on it and scored a 40 BESS. I'm just playing with the finish on it now.@bsfsu what is the game plan for this project doctor!?
Already a massive improvement! Good job manI hammered it till it was straight then did a major thin on it. It's pretty much a zero grind now but I put a little koba on it and scored a 40 BESS. I'm just playing with the finish on it now.

I see a lot of badly chipped and mangled knives, but here's one someone brought in on Friday (so I haven't got round to yet) but it's a bit different, and something I don't think I've seen before...
This looks like a stainless clad san mai knife, that someone's then left in bucket of water for a year or three. And it's just completely corroded away the core steel for much of the edge, leaving the cladding intact. You can't really tell from the pics below but it also caused some delamination up at the tip, so the corrosion of the core steel probably goes even further up than you can see atm. I have literally no idea how much of this knife will be left at the end.

I think that's just a gouge in the iron clading from what looks like a tin can? This is serious stuff right here!
Chips
Broker tip
Rust
Bends
Crack !?

Oh I forgot to post the results here. Back to front, including sharpening, these probably only took about 15 mins each. The gnarliest-looking knives are not generally the most time consuming to repair.

Lovely work on both. Looks like the core ended up being ok behind the cladding on this first one?Oh I forgot to post the results here. Back to front, including sharpening, these probably only took about 15 mins each. The gnarliest-looking knives are not generally the most time consuming to repair.

noooooooo!I’m not a professional sharpener but I do sharpen some of my fellow cooks knives. I have a good one here, some of you may shed a tearView attachment 262071View attachment 262070View attachment 262072
I still haven’t fix this, I may mail to somebody because I’m not sure if I have the patience or skill to fix this
It's indeed a not so good looking blade! I really like that splinter factory on the handleCertainly not the worst I've seen. Some flat spots on the edge from bad sharpening, and the handle came off.View attachment 270768
Edit: oops forgot to add the photo
Here's the result of my rework on the knife from my friend. Reprofiled the blade to fix the long flat spot, thinned behind the edge, a quick cleanup of the scratches, and a new burnt oak handle to replace the original plastic ferrule ho one. Hopefully it will continue to get good use for years to come.Certainly not the worst I've seen. Some flat spots on the edge from bad sharpening, and the handle came off.View attachment 270768
