My first Maillet! Definitely has a really flat profile so we’ll see how that agrees with me, but the taper/tip look really functional! Can’t wait to take it to stones eventually to bring out some more detail in the twisted wrought damascus.

Impressive f&f on the French chef for a “production” knife - definitely an incredible value at the price point. And the custom ain’t half bad either.

Day 3 and it's another Birgersson. This time from his new stainless clad offering! Got myself a 181mm x 51 mm to serve as a low maintenance quick prep knife. It's in a weird spot in my collection as I have a stainless bunka from Knot.handcrafted that I reach for instead so it might hit BST in the near future. 147g with a burnt ash handle

246x53, 152 g without the handle. Good distal taper, a lot more "smooth" with less hammer marks than my older work of his, though you can still see some on the left side. I am exceedingly pleased with the profile on this. That big flattish sweet spot is a push cutting dream. No sharp spots on spine or choil, OOB edge is sufficient but meh, will put my own edge on it after handle install. Tagging in @Yoshi As I promised to show him as soon as it arrived.

Followup:

Played around with a few handles and settled on a Louisiana sinker cypress w/ ironwood ferrule (SWAMP) to plunk on the Shindo. Final weight 199 g but I left the balance quite aggressive so it feels better than that.

So I saw a few guesses for today's knife but maybe I should have specified a "recent favourite" and added desert ironwood handle. Today's knife, which arrived only 3 days ago, is from @eddworks. A 226 mm x 55 mm gyuto at 204g from 52100 steel. I asked for the knife to be on the thinner side of his target margin values as I prefer lighter knives. And, like every other testimony, it is amazing! I absolutely love the knife, it cuts well and the food release is so satisfying. Also I have to note that the knife tapers from 5.2 mm over the heel to 0.6 mm at 1cm before the tip and it is just so comfortable. For the handle, I wasn't completely satisfied with the figure I saw on the ironwodd Ed had, so I was allowed to buy directly a blank from his supplier and I chose one that I found was very nice and it came out stunning. Thank you again for the knife @eddworks

I have one from that batch on the way too! Very similar to yours - 207x51 in 52100 with ironwood, and I also asked for extra-thin. Great minds think alike.

That’s a stunning piece of ironwood you selected for sure.

Those billets were then sent to Mazaki in Japan, and he forged the knife with his shirogami and used the wrought for cladding. I’m told it’s Mazaki’s first time using wrought iron. It came in at 246x55 and 292g. The top two photos are from Simon and shows the wrought. The bottom two are from Mazaki. He made two knives with those billets. Letshandlethis made the handle and rockchopknifeco did the polishing. I haven't used it yet, but aesthetically, it's a beauty!
