I've used this thing for several years with love. it recently got rusty, and I simply scrubbed it clean. now it seems much more reactive. to the point, I can smell that metallic smell when I slice onions. did my scrubby-scrub-scrub removes some kinda protective layer?
 
Perhaps a strange suggestion to a fanatic scrubber: you may both force a patina, and have a smooth feeling. Offers a good stability, unless you leave it dirty for a longer period.
