I finished the chef so far. Handle is shaped and sanded up to 1500 grit with high polish surface.
It's stabilized walnut and mapleburl scales in a coffin Style shape.
It's pretty comfy imho.
Some more specs will follow with better pics.

Working on a Honesuki out of 52100. It's not 100% single bevel, more like 75/25 or so. I have to measure it out when it's finished. Ordered some handle material and start working on the handle when it's arrived.

Pretty interesting workflow for this one...

Made some progress on the 240mm Gyuto (out of 52100). Blade is done so far, now it's time for the handle. When everything fits together, I'll start with the handle for the Honesuki so I can glue everything at the same time. Makes more sense to me...

The Gyuto is finished. I'm not that happy with it. There are too many little things that bother me. The handle could be a little more voluminous. Above the cutting edge it could be more convex... and so on...
Anyways, I'll keep it for myself because I have nothing in that size so it's okay. I mean it cuts very well so it's not useless 😄 but I have to do a better job in the future!

(It's a bit dirty and reacted because some test cuts in potatoes, carrots and onions...)

I think too 😄, but I don't give thinks out I'm not absolutely happy with... I'm planning to make 2 Petty's out of stainless Niolox. Give my best to make them better 🤞
The Honesuki is going well so far. Hope I don't fu** it up 😄

Overall length is 285mm
Blade length is 150mm (sharp)
Height at the heel is 41mm
Thickness at the heel is 4mm

Handle is coffin style with a height (at max) of 26mm at max thickness of 19mm.

Weight is 142g.

Funny little side project. An old Solinger "Carl Mertens". Bring back the handle, get off the overgrinds, thin it out and finish it. That's the plan 🤔😄

While I have to wait for the heat treatment of the Petty's I'll do my best on refurbishing an old Solinger.
I bring back the handle out of its epoxy pyjama and ground out the overgrinds. Also the tip was a bit "untippy" 😄
I thinned it out and take a test edge on it but I think I'll take off more material behind the edge to get a better performance.

that refurbished Solinger looks amazing!

do you do anything to try to color-match the epoxy to the old handle? Do you do any cleaning of the handle or in the cracks before flooding it with epoxy?
It was given to me in this condition, I don't know why it was flooded with epoxy. I think because cracks and/or holes. When I'm done I'll treat the surface with oil or wax or maybe wood hardener 🤔 we'll see

It's not that easy if you don't want to destroy the original profile because I want to keep the outlines.
Now I want to thin out the blade a bit more then it's done I guess.

Maintaining the symmetry there from side to side no doubt requires a lot of skill and patience. Very well done!
