So yeah, I'm moving and trying to simplify my life. That being said, my shop is completely packed up and I am not able to tune these up as I normally would; fresh edge; pointy tip; patina cleaned, etc...
First up;
*Sold* Mazaki 240mm KU gyuto
This thing is a beast. Absolutely delightful cutter. So thin at the edge with so much beef behind it. Almost feels like it's going to cut through your butcher block. Very little use. Some scuffs and patina. Has an oversized handle to match the heft of the blade. 247mm heel to tip. 53mm tall. 290 grams. Comes with killer saya. $340 Sold
Sukenari Aogami 270mm gyuto
Very sleek profile. Very little use. Recently thinned with a fine scotch brite finish. A few scuffs left. Needs a good sharpening. Killer Snakewood handle with two toned horn ferrule. Beautiful leopardwood saya with matching horn pin. 259mm x 52mm 248g $380 $355 $340
Tesshu Shiraki 270mm gyuto
Not 100% but I think it's blue steel. Super sexy grind. From the era where Shiraki himself was still hands on. Had some pitting from long term storage (even with oil). Has a fine scotch brite finish that revealed some hidden wonky scratch pattern. Finish not perfect, and needs a good sharpening, but has had little actual use. This is actually a brilliant knife to use. One of my favorite handle and saya combos. 256mm x 49.5mm 260g $345 $325 $315
Okada 240mm Damascus slicer
This is a dual bevel takobiki style slicer. It is iron clad and has an ugly patina and not perfect fit and finish. A little work and it could be quite attractive. It has a killer Snakewood and elforyn ivory handle and a real bog oak saya. Very special package. 230'ish mm x 29mm 210g $300 $275 $260
Sukenari SG2 Damascus Gyuto
Mirror finished. Has a few light scuffs from saya and sharpening. Ebony handle with a nice custom saya. Very striking combo. Eye catcher. 229mm x 50mm 204g $365 $340 $320
Tanaka ZDP189 150mm petty
This is an old stock (12 years) when they were listed as ZDP rather than SG2. Came directly from Shigeki himself. Light use, a few scuffs. Deep etch. Wild handle. With saya. *It was pointed out there is a small microchip about half way up the blade, I'm sure it will come out with a single sharpening. 153mm x 32mm 102g $300 $280 $260
