The brands mentioned have some good rubs. As do Kosmos, Tuffy Stone, and Heath Riles...to mention a couple more. Within each brand some are sweeter and some are more savory. It really just depends on what protein you're cooking and the flavor profile you're looking for. There is no "best"...

It seems most only refer to Blue 1 , or AS, and don't mention Blue 2. Why is that?

I thought about the ginsan too. I don’t have anything in that steel. How was the edge life with it?

Yep. I just looked through their offerings and they are generally priced high. Some 2X from what you can get from other shops

Thank you. I have a gyuto from the Hado Sumi line, but not Junpaku. The Sumi and Blue Damascus are very different.
