BTW I might be ordering something direct from wat in the next week lmao, would prefer going through Maxim and paying a tad more but wats inventory seems to be better. Maybe that’s a bad sign? Who knows?
I've bought a few things from Shin in the past and he has always been very communicative and helpful. Got fantastic knives and awesome stones too. So I can't complain. You could always ask him to send a few more pictures from different angles of the knife you are about to buy so that you know exactly what you are getting.
 
Can you share the website link to that vendor? would love to compare and see what he has to offer vs Maksim in terms of stock and prices. Cheers
It’s Hamono.ocnk.net. Their stock has been dry for a bit and you need to proxy it so you probably wouldn’t even save much unless you’re buying the dammy which is way cheaper there.
 
I think they refer to zahocho.
I had two iteration of toyama. One 210 migaki iron clad, sold (too short)... regretted it and bought a 240 Ku.
The migaki was from jns, and the Ku from zahocho.
Can't compared directly, of course the migaki had better f&f, but strictly on cutting performance, they are strictly equal.
Don't really understand why jns sell the same Ku for a lot more money (zahocho is maybe aggressive on pricing)...I doubt there is a significant difference in f&f that justifies the price gap...
 
I have a Toyama KU nakiri from JNS and a KU gyuto from Zahocho. No difference in F&F I can detect. I also have several other Toyama in stainless clad and damascus from JNS and OCNK. Again, no difference in in F&F. Finally the Watanabe Pro KU nakiri I used to have is about the same as the JNS Toyama nakiri I recently got in all respects, though I think I lucked out with a slightly better executed grind on the JNS in this case.

So I think you can buy wherever you see availability or better price without any concern. JNS is definitely the most expensive but also tend to have most availability. Seems like OCNK hasn’t restocked in a long time.
