    I have not hit the 1K mark on knives. That has been my rule so far… Curious if I am gonna break this anytime soon. Lol I am trying to imagine being in your shoes of owning a few $1K plus knives and not using them (out of fear you will break them or tarnish them?).

    Is it the texture of cooked whole spinach leaves? Chopping them changes the texture that i find more palatable. I have a toddler and he seems to enjoy it this way.

    Miyazaki Kajiya Damascus Tsubaki 180mm in Ginsan. Tim Rowland (Rowland Cutlery) did the handle for me. Sent him a stabilized lychee wood base and he added a Alder wood spacer. Zach from Tokushu sold me the blade and did the handle install.
