    Restoring an old breaking cimeter

    Just got this, It's got a strange, sandy 'patina' on it. Khaki colored, not an orangey/rusty color. Cleaned western carbon blade for reference. Some of the moderate pitting, and two spots of active rust: I'm giving this a soak in white vinegar. This image after about 2 hours.

    Suggestions on re-profiling this 4" paring?

    Any thoughts on this other than just the standard, shortened spearpoint? That's my plan; making it about 3" long or thereabouts. And I don't think I'll mind it at 3 inches. I envisioned a macro nakiri but there's just not enough meat on the bone for that. lol TIA!

    How would you reprofile this worn chef's knife?

    The blade's roughly 235mm long (9.25 inches) by about 50mm tall with the spine being about 3mm thick at the bolster and tapering nicely down to 1mm well before the current tip.     Dunno if this is the right place for this but... As an addicted Henckels collector I got an older (?) wood chisel from ebay. Some moderate pitting on the steel but it cleaned up well and took a very good edge. It's a nice item for my collection, and may even see some use in future restorations.

    Any reason NOT to use mineral oil as a lubricant on oilstones?

    I notice my bottle of Norton sharpening stone oil says "highly refined mineral oil". Or if YES what other common product is better? WD? Other? I'm talking about for use on entry level synthetic stones used on sharpening systems more specifically.

    Williams Sonoma nogent, made in France

    These popped up on ebay today and I find them interesting. Very early 'nogent' style, but Williams Sonoma wasn't started until 1956. Seller states 'probably stainless steel'. Looks like really nice craftsmanship on these IMO. It gives us an idea of what was going around 1960.
