    next steps on project (knife)

I have no issue to remove material from the hagane and obviously I try to keep my fingers on the blade to avoid some nasty injury. When I work near the edge I generally work with the pressure of my thumb and I position myself at an angle so that I am comfortable and as close as possible to the...

Has the thought of going vegetarian ever crossed your mind?

I have been vegetarian for about 8 years now. When I turned thirty, I had big questions about my personal life. I decided to make radical changes, both from a dietary and from a personal point of view. Motivations are different for everyone and it is a completely personal choice. For my part, I...

    next steps on project (knife)

I did a big thinning project recently and it took me about 3 sessions before the performance was to my liking. Generally when I work the main bevel it is for the aesthetic finish. But on this project it was purely to practice and achieve exactly the feeling I wanted with the knife. I started...

    Custom wa handle - Portfolio & WIP - V2.0

I finished a handle today that will probably be on the next honyaki blade I'm polishing. I dared something different and I think I like it. I'm not sure yet, it's really a big contrast! But this material is really pleasant to work with (Corian) and seen up close, this ferrule offers a super...

    Custom wa handle - Portfolio & WIP - V2.0

When a customer has a very specific request, it's also pleasant! Here it is carbon fiber with gold leaf between two brass separators on ebony wood. We can say that it is really chic. I really like it!

Gallery of Past and Current Work

Haha this is the best review a polisher can have! So glad that you like it ☺️ It's honestly one of my favourite I ever made. I find that everything complements the blade well and is well balanced. Thanks for sharing your thoughts, it's really cool to know that you love your knife and are...

    Honing rods

Funny enough, I did this video today with a ceramic honing rod ans tested it with the Sharp Bess. I find it super quick to do and really effortless. Obviously, like everything else, you need the right technique. But the result is always to my taste for the maintenance of my knives.

Honyaki polishing projects - A portfolio of my WIP

Polishing this gyuto for a customer is now complete! I love working with 26c3 steel so much and this mizu honyaki gyuto from @MSicardCutlery was really nice to polish. The initial plan was to leave the pearlite mirror but when I discovered these flairs that were connected to the nioi guchi, I...

Honyaki polishing projects - A portfolio of my WIP

It still remains one of my favorite moments before etching a honyaki blade. I have no idea what type of tree is that produces these flowers but it's really beautiful! Can't wait so see what's hidden under this mirror!
