I make a few knives, and am in need of learning more about kitchen knives as they are to become more a part of my meager repertoire. In just 2 threads read I've already learned a lot. I don't use stones for the knives I have, if I wish to put a fine edge on one I use flat glass and fine wet abrasive paper sheet. All the knives I use, outdoors, workshop or kitchen are made by me, not all of them with a lot of pride, but they're workers!
