    C-Grind honyaki gyuto US passaround

Hi ! It is indeed thinner, 2mm-ish at the spine versus a bit more than 3mm fo rthe c-grind. This one shows my usual production basically, whereas the c-grind is more R&D. Happy to get feedback on both obviously 😇 Steel is 125SC by the way. Enjoy !

    Knife shops in paris.

Hi, Sorry for the late reply. You can look at Kama-asa in the 5th district. It's a subsidiary of a kopabashi shop. Also depending on when you will be there and where, you can DM me for a quick visit at my workshop - if I've got a bit of time I'll be happy to have a quick chat, although I don't...

Hi all, Here is theh latest out of the shop. This time is for a sujihiki, forged in APEX Ultra, 320mm long for 297mm cutting edge, 39mm high at heel and 4mm thick (and tappering). I forgot to weight it before sending it over to its new owner 🫣 The handle is rokkaku hanmaru shaped in acacia and...

    Passaround - SylvainM - C-Grind Bunka

Guys, no pressure ! Any feedback is a good feedback, even if less developed that those two we already got. Not anybody can be as precise as those two but that doesn't mean there is nothing to take from 😉

And yet another honyaki blade - it's never enough is it ? 🫣 This is a 208x51mm gyuto featuring a 190mm cutting edge, 2.1mm thick at the heel, forged in 125SC, 146 gramms. Handle is rokkaku hanmaru shaped out of bocote wood with a boxwood spacer. Grind is almost flat, slightly convex. Like it ...

Hi all, Sometimes things don't go as planned, but you still managed to get something out of it... So here is what's left of what should have been a gyuto 😅 Well, I'm sure this little ko-bunka will find some love somewhere in the hands of someone who likes finely cut garlic or schalots ! Blade...

Hi all, Here are some more gyutos which I made last week. Both are quite thin, 2 mm at heel, and both are forged in 125SC steel and selectively quenched (honyaki). First one is 200 x 59 mm for 190mm cutting edge, light S-grind, African acacia with ebony bolster handle, rokaku hamaru shaped...

    Best steel for a Nakiri

If you're really looking for edge retention, tungsten allied carbon steels may be interesting if we'll heat treated. That leads you to apex ultra, 1.2442 and 1.2519 for instance as well as aogami super if I'm not mistaking. Just my one penny opinion 😬

Last message before your reviews I promise - As a matter of interest, here is the second knife I included in the PA. Blade is 125SC, 200mm, about 2mm thick at spine from the top of my head. Hope you'll find some interest. Enjoy !

    WTS Two 125SC Honyaki gyutos

Well the initial plan was to have the main handle part in cocobolo and an ebony bolster, but I f***d up the handle so this bolster is all I could save 🤣

    C-Grind honyaki gyuto US passaround

Sorry for this - I considered doing a left grind but feared not to have enought participants. Also I'm a righty myself and would like to test the knife myself at the end of the PA to see how it handled it ;)
