    People are sleeping on those knives. Kobayashi‘s grind is one of if not the best convex grinds I‘ve tried from a Japanese maker. If only the Gyuto profile was better.

    Weird 'patina' on Magnacut

    I had something similar happen to me just today. I was cutting citrus for marmalade and got called urgently. The knife sat there uncleaned for 30-40 minutes. After finishing everything I cleaned the knife and noticed a weird layer. It looked like the polish had changed and but no red rust...

    yes, to my knowledge this is correct. Yamato is a „sister“ brand to Konosuke by Kaneshige Hamono. When I got mine I received this info: „Forged and sharpened by the young craftsmen. (the blacksmith and the sharpener are working in the same workshop which isn't located in Sakai but in Osaka)“

    I've tried a smaller Shibata and smaller Kobayashi. The Shibata was insanely thin and lacked convexity for my tastes. The Kobayashi is underrated, it had fantastic convexity and cut just beautifully. Both knives had very good fit and finish however I didn't enjoy the 7-sided red handle you...
