    You didn’t mention- Have you tried a preferment plus autolyse before the main mix? The longest autolyse I’ve ever done is around four hours; but it could probably done overnight (in the refrigerator if necessary) at the same time the preferment was feeding itself at room temperature. This...

    I can’t speak for the crowd, but iron clad W2 with chestnut handle would be my preferred configuration, depending on the weight - there seems to be some variation between releases. I’ve never had one of his, but I hope to eventually.

    I’ve followed this Bardolino producer since 2014. Their reds are unpretentious but not at all simple, and really delectable. This is just too good with a slight chill.
