Pan to medium heat, put pizza in pan, half a teaspoon water on pan, it should sizzle. put lid on immediately, cook for 1-2 minutes, just make sure bottom does not burn. remove lid, keep it on another minute so the dough can crisp up. Enjoy.
I have a Raquin, which developed some orange discoloration on kurouchi finish. I have tried to clean it with bicarb and oiled it thereafter. And it keeps coming back following any wash with water. Oiling kind of makes it less visible but it is again apparent when oil is removed. Can somebody...
