    Is Wakui WH worth it?

I've taken the saya from jns, but maybe they are out of stock. Any way when you buy there is the option to flag

    Is Wakui WH worth it?

One of the best f&f you can find on a knife. Saya and chestnut handle are a nice upgrade. Last iteration cuts really well despite the weight. White 2 steel is very well treated, i'd say almost on par with munetoshi. At the end the feel in hand is a matter of personal preference, it worth to try...

    Colatura di Alici

You can do aglio and olio pasta and add one spoon of colatura per person, consider it is very salty, so i would not add salt in the pasta's water

    Knife Learning Roadmap

I would consider to buy a 3-4 k stone, 1k edge is ok, but with your current knives you can really enjoy a more polished edge

    Looking for a laser

https://www.japanesenaturalstones.com/tanaka-yoshikazu-gyuto-210mm-white-1/ I have the Damascus version, but i think you can't go wrong with a Tanaka, and it's well under the budget

Need recommendations for new paring knife

Keep in mind that damascus knives are a little more difficult to keep with a decent finish, but in this case a light refinish with sand paper and finger stone are sufficient.

Need recommendations for new paring knife

The handle is quite slender, but i find it comfortable although i have big hands, it's quite similar to a wa handle. Tomorrow i can provide some pictures, but i think that you can see it live in a decent shop if you search a bit.

Need recommendations for new paring knife

I love my miyabi 7000d 13cm, a bit thinner respect to the tojiro, it's vg10 and available on Amazon. With time logo will disappear, but stunning knife anyway.

Recommend me a 180 mm petty

180 Mazaki is great, has a suji profile and is not crazy expensive (at least it was not too expensive last year when i took one)

Recommendations for my 1st Natural Stone

After some experience with both Belgian and japanese stones i would also say that Belgian blue with matching slurry stone provide one of the best edges for the price point. Anyway once you try a natural it's easy to fall into te rabbit hole and decide to try all the stones you can find.

Recommendations for Paring knives. Tajeshi Saji? Miyabi? What else?

Takamura also makes solid knives for the price that are very thin if the op wants the r2 steel. Imho damascus is a little bit more tricky to sharpen if you want a beautiful edge. For sure Saji knives are beautiful and i think that feels more substantial in hand, but i've never owned one. Miyabi...

Anyone ever buy a JNS reject stone?

I've bought a couple, one had a couple of lines that have to be digged, or a strange form factor. The prices have been rised, in some cases the price is not far from regular ones.

Anyone Heard of Natural Whetstones from Indonesia?

An Italian YouTuber made a video on them: Don't know if Google can provide the translated subs. He reviewed 2 batches, more from the perspective of razor sharpening, the first batch resulted slow with too much variation in grit. The s con seems better. Shipping costs way more than the stones...
