    I think the video already gave you a lot to go on. I think ironically the armor that was considered 'too brittle' for tank usage might actually make the best knives. Ideally speaking tank armor was supposed to be not too hard, because you get issues with spalling, cracking etc, so good armor...

    FWIW Carbonext was my 'first good knife' and though it benefits from some thinning out of the box... they have remained with me through all those years. Not flashy but quite practical. Just keep in mind the 210 is rather low in blade height and quite different from the 240.

    Even going from no-name cheap rental fridge to a proper Bosch with a vegetable I had the same experience. I think it also helps to clean the thing out properly every couple of molds to slow down the growth of mold.

If you do a bit more work yourself you can get higher quality meat at a far more palatable price (for example buying whole birds, larger pieces of meat, whole fish, etc).
