Perfect thanks :) Wanted to add that I ordered the petties to Shinichi after putting up a thread to get the forum's advice, and I'm really not disappointed! Plus, as mentionned by someone else before, the petty is way thinner than the gyutos he makes!

Dunno if I can actually give the name as he is not a forum supporter, if I can't please someone delete the message :) He's called Carter Hopkins, did the handles and the saya, and did an amazing job imho.

Since apparently I am in the trend, here is my birthday present, received few days ago (actually the present is the handle, I ordered the blade) : 180mm Watanabe honyaki petty mirror polished (and his little brother, 120mm Watanabe petty). And also, my g/f birthday knife (only...

    Looking for wide bevel knife

The ST Syousin Sakura is a really nice cutter, but as chinacats said, it's iron clad, and it's v reactive.

    Custom Knife Ordering

I got into the waiting list 2 weeks ago, and I have 41 months to wait, BUT : The discussion about the knife starts straight away, I'm currently emailing back and forth with David, and trust me the emails are LONG! I'm learning a lot about their grinds, it's really fascinating. I can't believe...

Knife Sharpening Service - London, UK

Anything more precise than "Greg" to google or search into the forum for someone who's new here :) ? I won't even try JKC then ! Still looking for sharpening lessons on London if people know about that.

Knife Sharpening Service - London, UK

I'm a bit in this situation as well, and I was going to give a go at JKC's sharpening service... might not send all the knives after reading that :p But also, they offer sharpening lessons, which I will probably try at some point, maybe you could try as well, as imho it's still the best way...

    Saveur article

Yeah the retirement part is quite true, people have a hard time understanding that living longer has to mean working longer... But as anywhere else, you find people (especially owner of very small companies) who work until they die, because they love their job and can't stop. Seems US have 30%...

    Saveur article

1371/30 is about 46, that's still a decent number of weeks, or they work less weeks but longer :p To German's defense, they are probably more efficient when they work :p I'm currently living in the UK that's why I was a bit surprised, as they just raised the retirement age, we have 5 weeks of...

I'm curious to know in which European country you work 6 month a year, work 30h/w and retire early 50s :p

Looking for a nice Wa Petty

Hahaha perfect! I actually asked the price for the mirror polished few hours ago, because I was very tempted to have it after seeing the gyuto from gator. Still have a question though : how does the patina behave on a mirror polish blue 2 blade? Does it dull the mirror, or do you manage to get a...

Many thanks :) Don't know if I will have the experience to write a real review, but I will definitely post some pictures and the specs of the knife. Gotta find a caliper though.

Looking for a nice Wa Petty

Thank you for the Watanabe information ! I did read that too, and as his prices are way below my budget, my keyboard might have dropped the "honyaki" word in my email to him :running: So I guess it would allow for a thinner knife. I mean anyway, I don't mind a carbon cladding, which will...

Looking for a nice Wa Petty

Thank for your suggestions. I am reading a bit on Watanabe knives right now, seems like they are praised a lot, and could be made in about 2 months, so I might send an email to know if I could have a 180mm petty and how much it would cost. I saw the Masashi Kobo on Aframes, looks nice, but...
