    It's softer and a bit punky indeed. It will drink a ton of oil and mineral will not harden - I don’t like handles that "sweat" oil. I'd use tru-oil but you might need many many small applications. Might even be best to consider sending it to knife & gun for stabilizing before handle making.

    Is the upper your clay application line? If so that's your explanation. You didn't grind away surface decarb you had through the clay. And the actual hamon positioned lower than your clay.

    There was a package theft in sweden on a 240 gyuto HSS1 I made. It has curly maple handle. So in case you're buying second hand, demand to see receipt.

    I use my stainless 165 broken gyuto very much thank you. That/cleaver/carbon 210 are the most used.

    Raw onions are fab almost to the point I'm becoming turkish. Indian vegan food is also great. Hing is a delicious spice. I see dhaal pizza with raw onions in my future.

    I'd guess FEPA. I don’t know, am not affiliated with them, but ime the loos hone finishes somewhat 1500-2000. Similar to your belgian blue in action but maybe ~half in grit.

    I like to punch out the holes, stack, compress and then bake whole assembly (150c ~20 min), tighten, bake a bit more. It kindof glues itself together.

    Buff baby.. Soft cotton and green compound. Lightly. However that finish still produces some drag imo so I prefer to buff clean or really close to.

    I prefer to strip where my hardness tester is located.

    Actually no on that. I used them for finishing after coarse grinding on the grinder only for a while.
