    Fast Food Hamburgers

guess i'm getting old and inflexible, but i'm perpetually stuck in the mindset of thinking nothing less than "$1 mcdouble" is acceptable for the price lol (or $1 mcchicken) McD's is dead to me. that said, those actually look better than i'm used to seeing them. the buns don't look nearly as...

ime, a majority of them do not actually go into the liquid, but the HOAc vapor for sure attracts them. i have had better success by taking a small (iirc 4 fl oz) widemouth mason jar fitted with a FDM printed lid featuring a funnel with a small opening. i put just a bit of vinegar in the jar, and...

    Hot Sauces

it's just that you really want to vac seal it to start with an anaerobic env to prevent contam. it's probably important with the bag technique because you're not even submerging the product in brine. that's all i meant. also, i have like a million of those sealer stick things in a bunch of...

    Hot Sauces

the only problem i see with that is it may be hard to vac seal it. i suppose you could vac seal it first, slide the thing over, and then cut off an impulse-sealed corner, however.

    Hot Sauces

wow, you reminded me of something. this happened to my friend once. insane fuϲking mess. he sent me pics, and i felt real bad for him. he's got a good impulse sealer, and he used a decently big bag, so it was able to charge up to fairly high pressure with high total mass of CO2. good explosive...

i don't think it's fair to say that's for sure who he's referring to and how he's thinking, but i agree with your guess and assessment. and yeah, it totally makes sense to get passionate about high tech processes and innovation. that resonates with me, and i don't think it cheapens the process...

    Hot Sauces

nah, they're anaerobes think about it. when you pickle stuff, you want to keep everything submerged under the brine to prevent aerobic competition. that's why people use pickling weights and other tricks. anyway, i've seen the bag fermentation thing before. seems to work.

    Nanohone diamond resin?

just from pics of his previous stones (what you call the 'hex weave'), i surmise he FDM prints his 'stones'. he likely bought small-scale filament extruder equipment. probably just dumps diamond dust into the melter along with the plastic pellets. that new texture looks just like a rough print...
