    KKF counts to a million

6,129 Step away from the keyboard, walk outside, touch the cool green grass in your garden, maybe even sit down a while. Watch and listen to the wildlife all around you, think about the scale of the planet (think about the scale of the universe!), feel the warmth of the sun on your face and...

    J-Nat Club

I haven’t done that much polishing recently, but I do have a few projects lined up which I’ll try to get started on very soon! I did get the chance to test it with my kiri yesterday though, and can confirm it’s a little bit bonkers. I would say it gives a step up in refinement from the...

    WTB /WTT: Good Shiro/Renge Suita

Looking for speed, nice engagement in terms of sharpening feel - not too hard, not too soft, a bright finish, and some niceee aesthetics. In terms of slurry, i'm after the kind of stone that kicks up black swarf quickly, but gives up just a little bit of slurry to help cushion the pushin'. I'd...

    J-Nat Club

To add some further (hopefully useful) colour to Edward’s steer, I tend to broadly compartmentalise comparably refined finishes into either ‘bright and crisp’ or ‘smoky and pearlescent’ when I’m differentiating between similar levels of refinement between stones. This is separate from contrast...

A little bit of coffee (restrained enough that you can’t taste it’s there) is an excellent way to deepen chocolatey flavours in desserts and so on.

    Show Us Your Kiridashi

Took my new (and first!) kiridashi for a spin today, courtesy of @Illyria I’m a lefty, but actually it’s not the worst thing in the world to get some practice in for my off hand sharpening.

    Knife findings

The grind looks a bit thinner at the edge on that 270 if the choil shot is representative of the whole knife. I bet it absolutely rips.

That’s just the cost for shipping with a courier such as DHL outside of the UK unfortunately. I usually use the international service from our national carrier which runs around £30 - everything else is much higher.

The Shake Shack buns are potato buns, but for home I bake my own.

    WTB Hand Coffee Grinder

I have a 2019 Feld47 by Made By Knock if of interest? I'm not using it much anymore after going for a more pour over centric grinder a few years ago. Shoot me a DM if you like.

Je suis désolé, by 'here' I meant the UK! Potato buns are the superior burger bun over brioche (too rich) and the buns Five Guys use (too flimsy). Shake Shack also season their patties properly so that you don't need tons of other toppings for flavour. They have a slight funk to them, so I...

    The Jiro Users Thread

Looks like a more organic and defined shinogi compared to his usual grind too. I wonder how insane the pricing will be 🫣

    Simon Maillet Honbazuke Diary

Thought I should share an update on this by way of a resolution to the discussion above. We've already established that I should have flagged the flaws I noticed with this knife straight away, and I took the advice to get in touch with Simon and discuss the best course of action. Despite the...

We have Five Guys and Shake Shack here now - Shake Shack is superior in basically every way.

    KKF counts to a million

6,123 I had my first proper NY bagel last weekend (made by a real New Yorker who moved to the UK) and it was So. Good. Totally different to the Jewish-style bagels you get here, which are also amazing in their own right. I went for a lox in case you’re wondering, but I’ve been dreaming of...
