Been a while since we had a Cleaver chat.

??? What do you think is a $15 equivalent to a CCK (X)? Or I could buy 3 of the $15 in different sizes. Any suggestions?

    buying goat meat.

If you are going to do goat curry.. will you be doing resto style pressure cook or rotisserie? I am based in Detroit with a very large Halal goat loving population and we have dozens of choices... in CA SalmonCreekRanch seems to be your only choice. No experience with them. I will start...

    Tongue recipes

Implied is beef tongue. I hoped the venison tongue would have played out more. In Detroit metro we get cured lamb's tongues (fresh) at Lebanese restaurants but only on "certain" days as the supply is not consistent for fresh. A vinegar dressing on romaine and fresh sliced onions and the lamb...

    CCK and Dexter Cleaver

When you put them side by side and send us the photo and model number for the Dexter fireworks will appear. Also, your use (veg, mineral, meat) and home or pro would get you >50 cogent responses. Congrats as well.

    Help.....slightly bent tip

daveb and others are right. The tip is now in the wrong spot. Starting from the spine put it in a flat spot and sharpen to that point. You can't really ruin it believe me. Do it before 05beer oclock. :cool2:

    What's in your bag?

Since NAFTA is still in effect I will send you a quick re-supply of beef as you have so many aquatic culinary tools you must be famished for MidWestern Beef. Don't worry the Global knife stuff sells on ebay, especially with the exchange ?? Get a proper Gyuoto and there are many recommendations...

What's Your Knife of Choice for Hard Winter Squash?

I'm not too wide to use an electric knife for pumpkins/hard squash as we're talking about converting vegetable into food here. Daveb and I agree utility is a virtue. I also use an electric knife for carving a whole turkey breast. Best tool for the job.. Besides a really good one is only...

German asymmetry - a peeler knife

Are root vegetables regularly peeled in hand in Japan? I have seen carrots/Daikon but don't recall conventional skin peeling of potatoes for example. I learned potato peeling by hand from my German raised mother but she is left-handed so I am sure her paring knife is symmetrical. Geometry seems...

    Let's see those sharpening stations!

I've not seen the swarf collection bowl shown in the left-rear of the picture. This changes the detritus collection significantly. Can you please show more pictures of how you got the flow to move off the bridge to get into a specific bowl?? BTW very tidy (5S) setup. Goat out!

    Best choice for professional Butcher

I was in correspondence with chuckthebutcher about his work tools vs. his collection of knives. After his passing I summarized our conversations as this. Goatwrites: Not long ago I sent Chuck a PM request for some input on which tools of the trade a real butcher used. ....If there is some...
